In Valais, ‘destemming’ involves manually removing from the vines, in summer, any bunches that are too numerous, too small or growing in too much shade. This process ensures authentic and exceptional wines.
However, the seeds, pulp and skins from the grapes harvested during this ‘green harvest’ are not thrown away.
Their polyphenols, rich in antioxidants, are extracted and used in the formulation of our day cream for normal skin. A fine example of the circular economy and high-value-added recycling!
